Dosage des protéines et des glucides dans les fruits et dans les feuilles de cinq cultivars de gombo (Abelmoschus esculentus L.) cultivés au Burundi
The determination of proteins and carbohydrates in okra leaves and fruits were carried out on five of all cultivars introduced in
Burundi. Biochemical parameters were assessed using Kjeldhal method for proteins and Luff-Schoorl titrimetric method for total
and reducing sugars. The results reveal that the leaves of cultivar G2 are richer in protein (19.6%) while the high content fruit’s
protein is found in cultivar G14 (12.4%). Reducing sugars contents are lower in leaves than in fruits. Indeed, the highest contents
are found in the leaves of cultivar G10 (1.2%) and in the fruits of cultivar G1 (2.6%). Total sugars are relatively high in leaves of
cultivar G10 (3.8%) and low in cultivar G13 (1.2%). In fruits, total sugars are high in cultivar G1 (4.5%) while the low value is
found in cultivar G2 (2.7%). The results revealed that fruits are rich in carbohydrates while leaves are protein’s source.
